Cinnamon espresso caramel fudge bites

Great for a gift or to keep for yourself these ooey-gooey, simple, delicious, espresso fudge bites are a delightful addition to your personal recipe catalogue! Enjoy!


Ingredients

  • 2 ounces brewed espresso
  • 1 teaspoon vanilla extract
  • 1 tablespoon cinnamon
  • 3 cups semi sweet chocolate chips
  • 14 ounces sweetened condensed milk
  • 1/2 teaspoon salt.
  • optional – caramel sauce

Instructions

1.) Coat a 9×9 (or 8×8) square pan with cooking spray and line it with parchment or wax paper.

2.) Use a double boiler to evenly melt the chocolate chips, condensed milk, and salt over low heat. Stir continuously so as to not allow the mixture to boil.

3.) Add in the coffee, vanilla, and cinnamon, stirring constantly until smooth.

4.) Pour the mixture into the lined pan. Optionally, coat the top of your fudge with caramel sauce. Make indents with a fork so that the sauce can settle into the fudge.

5.) Allow the fudge to cool in the refrigerator for at least 2 hours.

6.) Peel off the waxed paper and cut into mini squares.

7.) Serve as is or wrap into individual pieces. These bites make great treats to share or keep. If refrigerated the fudge will last up to 2 months!
