This is definitely not your mama’s pudding cups!! The recipe takes approximately 30 minutes from start to finish and makes 15 delectable, boozy 4 oz. pudding cups.
What you will need
1) 2/3 cup sugar
2) 1/4 cup cocoa
3) 3 generous tbsp. cornstarch
4) 1/4 tsp. salt
5) 1 cup coffee
6) 1 and 1/4 cup milk
7) 1/2 cup Baileys
8) 2 tbsp. butter
9) 1 tsp. vanilla extract
10) Whipped cream, cocoa powder, and or marshmallow bits for garnish (*optional)
Directions
• Combine ingredients numbered 1 – 6 in a medium saucepan.
• Cook over medium heat, stirring constantly until the ingredients begin to boil.
• Remove your saucepan from the heat and add ingredients 7 – 9. Stir until mixture is smooth.
• Pour your mixture into 4 oz. (or smaller) cups and seal tightly with plastic wrap, or plastic tops. This will stop a hard seal from forming on top of the pudding.
• Refrigerate your cups for at least 2 hours to thicken. Garnish as desired (whipped cream, sprinkles, marshmallow cocoa, whatever you like!!) and serve.
